How to Steam Clams in the Microwave

We found this  blog post from Cilantro Cooks and wanted to share it with our readers because it is a perfect recipe for our multi-oven cookware and we loved steamed clams!! shutterstock_7612597

“…sometimes there’s nothing like a plate full of delicious clams steamed and seasoned just the right way. But not in a cooking mood or too busy to take the time? You can still satisfy that craving! Here’s how:

  1. Arrange the clams around the outer rim of a 10 to 12 inch shallow round microwave-safe dish, leaving the center open.
  2. Add 1/4 cup water, beer, or white wine.
  3. Cover with cellophane (plastic wrap) or microwave-safe plate (to make it even easier you can use one of our multi-oven cookware pieces) and cook on HIGH (100%) for 2-1/2 to 5 minutes, or until all the shells have opened, rotating the dish once in the middle of cooking time if necessary. Discard any unopened clams.
  4. Enjoy with cocktail sauce or melted butter and your favorite seasoning! I like to spritz on a little lemon juice right out of the microwave and mix garlic powder with the butter. Yum!

And that’s all there is to it! The best way to double this recipe is to do it in batches, clams are very delicate organisms and will overcook easily.

If this is your first time cooking with clams or steaming, here are some things to keep in mind:

As the clams cook they will release more moisture so be sure not to add too much extra liquid, as this will result in boiling rather than steaming.

If you’re using cellophane to cover the clams, puncture a few small holes or leave a corner open to vent a small amount of steam (but not too much!). This will prevent pressure from building up, otherwise you might end up with a bit of a mess to clean up. (Nautical Scout multi-ovenware to the rescue!)

The clams must be alive or very fresh before cooking as they spoil very quickly. To prep for cooking simply scrub away the sand and grit under cold water. Thump on any that are open and if they don’t close, toss. They are dead and should not be eaten. If you do not plan to cook them right away, you may freeze live clams for up to 3 months.

Meals Planned ahead

Several customers have mentioned to us when they’re taking a long weekend on their boat or RV, they’ll make a soup, stew, or chilli in our 2 or 4 Qt stove top cook pot, then freeze it in our multi-oven cookware so they can bring with them for meals on the go.   At meal time, they just pop their frozen multi-ovenware cookware meal into microwave or oven for fast and convenient meal prep.   Anyone with kids knows a preplanned meal for them is a nice hot meal for the parents!

Ice Cold Shrimp Cocktail a la Bucket!

This happens to be one of the most unique ideas we’ve seen.  A creative owner of one of our collapsible buckets filled it with ice 3/4’s of the way up, then took the stainless steel lid from our 4Qt pot and placed it over the ice…the lid side’s nested snuggly into the sides of the pail.  (You need to use enough ice so that it comes in contact with the lid).  After a couple of minutes the lid became ice cold and our fellow Scouter place the shrimp on top of the lid and served.   The shrimp stayed cold without getting wet.  We we’re told the bucket handle was the only draw back in this situation when others decided to walk off with the shrimp…not sure if they were refilling or taking for themselves.

Oysters filter 50 gal of sea water per day! … watch

Apparently, eastern oysters were once abundant in the Chesapeake.  Unfortunately, according to a 2011 report from the MD department of Resources, the Chesapeake Bay eastern oyster population has declined 98% since colonial times. Unsurprisingly, this is due in part to over harvesting, habitat destruction, & water pollution.  Although, disease also played a role in the late 1980’s according to the CBF.

I had know idea oysters were so prevalent in the Chesapeake.  Given their extraordinary filtering capabilities, developing a sustainable oyster population is seen as a way to help keep the bay cleaner.  An intriguing way to let nature take care of itself, if only we would allow it to happen.
