Steamed Sea Bass with Clams

At Nautical Scout, we are huge fans of seafood! This recipe is for sure to please your appetite for fresh shellfish.

Poisson blanc â la vapeur

Ingredients: 

  • 2 pcs Sea Bass or similar white fish
  • 8 pcs Little Necks or Steamer Clams
  • 4pcs Black Olives, halved
  • 1 tbs Capers
  • 2 tbs White Wine
  • 15 Cherry Tomatoes
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tbs Olive Oil
  • Fresh Basil Leafs

Basil Paste*

  • Fresh Basil Leafs
  • Pine Nuts
  • 3 tablespoons Olive Oil

*Use a mixer or food processor to make paste

Directions:

  1. Prep Sea Bass with salt and pepper to taste; set aside.
  2. Slice cherry tomatoes into halves, season with salt, pepper & olive oil inside the steamer.  Microwave for 2 – 2 1/2 minutes on 600W without cover.   (Always adjust your cooking time based on your microwave’s output rating.  If in doubt check your user manual).
  3. Add sea bass, little necks (or steamer clams), black olives, capers and white wine into the steamer with the cherry tomatoes
  4. Cover steamer with lid, and microwave for 3 1/2 minutes on 600W.
  5. Dress with basil leafs, and add basil paste as desired.
