Microwave poached egg with Avocado and Tomato

90 Second Poached Eggs with Avocado and Tomato on Toast

Ingredients:

2 Large Eggs

1 Ripe Avocado (or if you prefer, you may substitute your favorite green vegetable such as asparagus, spinach or broccoli)

2 slices ripe tomato

1 tbs white vinegar

1 Maitre Français steamer with transparent steamer plate removed – both medium and large size will do

2 slices bread or english muffin toasted

Directions:

Toast bread

Slice tomatoes and avocado

Fill steamer with enough boiling water to cover the two eggs. [We use boiling water to shorten total cooking time. You may use warm water but you must increase the cooking time to allow for the water to boil.  However, this will also begin cooking the eggs before the water is boiled, which is why we prefer to start with boiled water.]

Add vinegar to steamer

Add eggs to steamer

Heat eggs in microwave for approximtely 90 seconds with a 1250W oven.

While eggs are cooking, place the sliced tomatoes and avocado on one side of the toasted bread

When the eggs are ready, you may touch them in the water with the back of a spoon to check doneness.  Remove when done, place on toast, and enjoy!
